Scratch in homegrown pancetta (oh so good from last years pigs) and spinach mixed with homemade ricotta for the filling. The pasta dough was made with our backyard eggs collected moments before. I don't experiment with foods or recipes and have my favourites that I make over and over. I have about a dozen recipe books and also one that holds hand written favourites. I only have so much space to keep them so I have sent a lot off to thrift stores.
