Cooking This And That . . .

A few days ago we had some
rainy and gloomy days
with high humidity too.
So I decided to do some cooking and baking.

Credit Diane for this recipe appearing on her
dianecayton-hakey.com blog
I think Jayme from Tales From The Coop Keeper
created the original recipe.

(not sure why but I couldn't get my link to work for either of these sites)

Easy Peasy,
start with two eggs.
Jayme suggests 1 egg, 1 egg white

Recipe calls for ground turkey
I used some baked some chicken instead
and shredded it in the food processor.
I used the following as a seasoning while baking the chicken.

and I also added these spices

Use some green pepper, if you like,
I don't, so I used some red pepper.
Next time I think I will add some shredded carrot.
I also used some onion, cut fine

one small onion
1/2 red pepper
cut fine

6 Tablespoons of Oatmeal

Mix everything together and mold into patties
Recipe also calls for two tablespoons of oil
I used olive oil and used it to fry up the
"chicken cakes"

And there you have it.
Very Good
I know they look burned but they weren't
Jack loved them too.
We included steamed asparagus with the patties.

(Did you notice I have a bit of a problem following a recipe,
it is why I have a big problem with baking !)

I also cooked up a batch of our
White Chicken Chili
(I always buy extra, especially when they are marked down in price.)
I use one large chicken broth, one jar large Randall Beans and one jar of salsa.
And some other things if you would like the recipe.
and
my mom's
Pumpkin Bars

What made you feel happy today?

I walked in the door after a pedicure,
 (which made me happy)
and peeked into Snickers bed and there she was
flipped over on her back saying rub my belly please.

that girl makes my day every day
~

The pumpkin bars sound good. I do not cook - by express request of my entire family - but I do bake.

Oh my hubby would love these yummies. Of course he is my cook. He cooks like a chef. So great with leftover Turkey couple of days later..

Now I know where my one Grandson

is in college to be a chef.

After his Mom and Grandfather.

Those pumpkin bars look amazing. I love all things pumpkin.

I always figured the best recipes were the ones that came with changes and a little of this and that.

However, my son the chef doesn't always agree with me.... but often asks my opinion, lol.

The pumpkin bars look yummy
