and I cooked him up
a new recipe.

Chicken & Broccoli Casserole
Ingredients:
6 cups bite size broccoli florets
2 cups bite sized cooked chicken
1 red pepper diced
5 T butter - divided
3 T flour
1&1/2 cups milk
1 cup chicken broth
Pinch of ground nutmeg
1/2 t kosher salt
1/8 t pepper
1 cup shredded sharp cheddar cheese
1 cup breadcrumbs
Ingredients:

1 cup chicken broth

Directions:Preheat oven 425 and coat with cooking
spray 9x13 baking dish.
Steam or boil broccoli 3 minutes - arrange in dish and top with chicken and red pepper.
In medium saucepan, melt 3T butter, add flour and cook 1 minute, whisking constantly.
Add milk and broth, whisking constantly until mixture comes to a boil.Reduce heat and cook 2 minutes, stir in nutmeg, salt, pepper and cheese.
Pour over chicken.
In pan, melt 2T butter and breadcrumbs,
sprinkle over chicken and bake 20-25 minutes.

Mr IGH and I thought it needed a bit more spice.
I used a rotisserie chicken and next time instead,
I will bake chicken breasts with spices I usually use for chicken.
I think I will also add some sauteed onions.
Instead of the breadcrumbs I am going to use a crunchy
cornflakes and slivered almond topping.

Pretty tulips Lynne. I always like to use BBQ chicken for my recipes as they are do moist and have some flavour too but I also add some other things for flavour like garlic and onion. The recipe sounds relish!
This looks really good. We like a bit of spice too, so when I try it, I'll add a little extra something. I wonder if it would help to used the Italian breadcrumbs instead of the regular ones?
The tulips are wonderful - I love the graceful way they drape themselves. I'm laughing, I am like that with recipes, I have to tweak and adjust them.
