Amanda is nearing completion of her Associates Degree.
This was a lab in presentation and service.
Food preparation, personal chef, baking and pastry arts
are some of her interests and labs she has completed.
She will be entering some of her advance classes in January.
Warm caramelized orange salad topped with toasted pistachio,
creamy Turkish Haydari, cucumber curls, Kalamata olives,
fresh roasted pears, baby spinach and orange blossom
champagne vinegar coconut dressing was the salad I chose.
Oh my, was it delicious . . .perfect!
Jack chose a salmon leek crab bisque
finished wityh a creamy rich shellfish broth,
fragrant rice and sweet potato and topped with a fresh fine herb.
He liked it very much!
I chose the apple cider ginger pork shoulder
with toasted kamut raisin pilaf, broccoli, crisp bacon,
and tomato chimichurri dressing,
with a crunchy bread flute and "oeuf sur le plat."
Excellent, . . . truly!

Our granddaughter Amanda
is one of the culinary students there
and Friday we had reservations for lunch.
We were welcomed by one of the students, she checked our coats
and we were taken to our table.
Shortly after being seated the young man above
treated us to a table side appetizer preparation.
The appetizer name escapes me, but I do remember
him mentioning the flavors of
Parmesan, Fontino, Gruyere and Stilton cheeses.
Those who know me know I am not a fan of cheese.
Being Wisconsin born has not been any help.
It was tasty, although the cheeses were strong, Jack said the same.
Fresh bread and drinks were served
and we were on our way
to being treated to some fine dining.
The room was filled here and there with other guests.

crisped chicken fillet
served with buttered asparagus, butternut squash puree,
red pepper fingerling potato hash and sauce Mousseline.

Lovely girl..We have a culinary school associated with Harrisburg Area Community College (HACC) that puts on these kinds of events now and then..Always fun and interesting to say nothing of tasty..I assume you didn't remember all of those foods and that you had a menu???

You have brought back some very happy memories when my Dad and I used to go to the local college and eat the catering students food, exactly as you did.
