Fingers, Toes and Growing . . .

 
 
 
 
 
 

 



 
 
 
 
I thought you might enjoy
a visit with
Oakland Victoria
my first great grandchild
 
six weeks old
how fast the time goes
faster now than when we were waiting for
her to be born
 
she is healthy and happy
especially when she is nursing
~
update on my new eating
it is going well
a  bit of a challenge at a family reunion this weekend
but I made it through
with just a few bumps
 
my favorite go to recipe is a
salad with
romaine, spinach, other assorted lettuce
fresh parmesan
cauliflower, peppers, thinly sliced onions, apple
balsamic vinegar
 infused garlic olive oil 
very, very good 
~
Roasted Vegetables
asparagus spears, red pepper, sliced carrots,
yellow pepper, garlic cloves minced,
Tuscan Herb Olive Oil
Lemon Balsamic
 
I am looking forward to trying this recipe this week.
place on large baking sheet in a flat layer
roast 10-12 or until tender and lightly browned
Bake in oven at 400 degrees
I plan to add some grilled chicken strips

Good Morning, Lynne! Your great grandbaby is just adorable.. Wonderful photos.. Glad you are doing well with the new diet..I know hubby has a hard time when the family eats out..The salad sounds delicious as well as the roasted veggies.. Have a happy day and month of June!

Congratulations on your progress. The salad sounds great and summer is the perfect time to be able to enjoy fresh vegetables. Great early results and things will just get more exciting. It won't be long before you will need to do some shopping for new clothes!

Curious.... when you eat this new way, does your husband also? I don't think I could get David to eat the way I would... in fact, when I was eating healthily a couple of years ago, he went right on enjoying his beefy hamburgers... LOL

The diet does sound good...I could live on stuff like that but my hubby is a meat and taters guy.
